Why is the file empty?
Most likely the PDF is a scan or photo: its pages are images with no text. For such files, use “OCR PDF” with TXT output.
What’s the difference between “By paragraph” and “Line by line”?
“By paragraph” joins the lines of each paragraph and merges hyphenated words — handy for further work with the text. “Line by line” keeps lines as in the PDF — handy for tables and contact or bank details.
What encoding is the text saved in?
UTF-8 — the file opens correctly in Notepad, Word, and any editor, and Cyrillic letters don’t turn into gibberish.
